Spicy Truffles

why yes, that truffle is sitting comfortably on a bed of cayenne pepper. that was only for the pictures. these little buggers have 3 types of spicy seasonings: chili powder, cayenne pepper, and ground red pepper. i know, cayenne is spicy enough without red pepper, so what's the deal?

when you eat cayenne pepper the spicyness is felt in the back of your mouth and throat plus it doesn't have much flavor- it's just
hot. red pepper is pretty much the same except the spicy feeling hits right at the tip of your tongue. so using them together means that the "hot" feeling stays costant in your mouth while you're eating the sweets. the chili powder is full of cumin and other flavourful herbs and gives the chocolates a pepper/vegetale flavor without adding any additional heat. it's very multidimensional, i'd put it at a medium on the heat scale, comparable to jalepeno flavoured potato chips.

and as kind of a warning, each truffle has a dot of white chocolate on top, sprinkled with red cayenne. like a little warning flag on the truffle.
